Carbonara

This is an easy and delicious recipe to impress new friends with your culinary finesse! The best part is that it needs very few ingredients so it’s easy to cook when you don’t have a lot of spices and basic cooking ingredients on hand. It won’t set you back a fortune and it’s easy to add to if you want to get fancy and creative with some fresh herbs or other ingredients like sun dried tomatoes or artichokes thrown in for extra pizazz!

Ingredients:
400g pasta
1 small onion
1 clove garlic
7 eggs (5 yolks, 2 whole eggs)
150g chopped bacon, speck or pancetta
100g grated parmesan, romano or grana padano cheese
Salt & Pepper

Method:

1. Put a large pot of water on to boil. When the water is boiling add the pasta and follow the packet directions to cook it to al dente
2. Finely chop the onion and add it to a frying pan along with the bacon to cook
3. Finely chop the garlic and add to the onion and bacon mix until all are cooked. Set the pan aside.
4. In a large mixing bowl, add 5 egg yolks and 2 whole eggs along with the grated chase and salt and pepper to taste. Using a fork or whisk, stir everything together until well mixed.
5. Once the pasta is cooked, drain it in a colander, and whilst it is still hot, quickly add it to the egg mix along with the bacon and onions. Using large serving spoons, quickly toss the pasta and egg mix together, mixing constantly so that the heat from the pasta melts the cheese and processes the egg. Make sure that the pasta is all well coated and keep mixing until the cheese is melted and you have a lovely sauce coating the pasta.
6. Serve immediately with a nice fresh green salad and some extra parmesan cheese to top and with some herb or garlic bread if you want to stretch the meal further.
